Strawberry Icebox Dessert is the ultimate no-bake Spring dessert. Fabulously creamy, it is a no-fail dessert and perfect for using plump, juicy, in-season strawberries.
Graham crackers, a cream cheese/whipped cream mixture and sliced strawberries are layered in a baking dish. This recipe is so, so easy. It’s a great recipe for kids to help with.
Once the graham crackers get soft, this dessert has the texture of a light and tender cake. So delicious!
Summer Dessert
Icebox cakes are ideal for summer entertaining. Their cool, creamy texture is perfect on a hot summer day. So refreshing. I also love that I don’t have to turn the oven on to make one.
Make-Ahead Dessert
This icebox dessert is one of my favorite make-ahead desserts for potlucks and get-togethers. It should be made at least 2 hours in advance. 8 hours in advance is even better. The graham crackers get soft over time giving it a wonderous texture.
Minimal Ingredients
No crazy ingredients needed to make this recipe. Just basic ingredients that you are likely to have on hand.
Cream Cheese– let it soften so that it mixes in well.
Powdered Sugar
Heavy Whipping Cream
Vanilla Extract
Almond Extract– go easy on the almond extract. A little goes a long way.
Cinnamon Graham Crackers– you can use regular or chocolate but I like the flavor that cinnamon adds.
Fresh Strawberries– the real star of this dessert.
Recipe Tip
You will need a hand-held electric mixer for this recipe. Be sure to beat the whipping cream mixture until it is thick, but do not overbeat it.
Storage
If wrapped well, will keep for 2 to 3 days in the refrigerator.

8 ounces cream cheese, softened1 cup powdered sugar2½ cups heavy whipping cream1 teaspoon vanilla extract¼ teaspoon almond extract18 sheets cinnamon graham crackers5 cups sliced strawberriesfresh mint for garnish, optional
In a large mixing bowl, use a hand-held electric mixer to beat cream cheese and powdered sugar until smooth.
Add cream, vanilla, and almond extract and beat on high speed until stiff peaks form.
Spread a small amount of cream cheese mixture in the bottom of a 11×7-inch baking dish. (This is just to hold the bottom layer of graham crackers in place.)
Place ⅓ of graham crackers in a single layer.
Spread ⅓ of remaining cream cheese mixture over graham crackers.
Top with 2 cups of sliced strawberries, spreading them evenly.
Place another layer of graham crackers over strawberries. Spread another ⅓ of the cream cheese mixture on top.
Top with another 2 cups of sliced strawberries.
Then add the final layer of graham crackers.
Spread the remaining cream cheese mixture on top.
Scatter remaining 1 cup of strawberries on top.
Cover with plastic wrap and refrigerate at least 2 hours and up to 8 hours before serving.
Garnish with fresh mint if desired and serve.
You can use regular graham crackers or chocolate graham crackers instead of cinnamon.
